The method relies on a salt-based dough that encases the pumpkin, creating an oven-proof barrier that allows the flesh to cook evenly. As the dough bakes, it forms a rigid shell, resulting in pumpkin that is tender and intensified in sweetness and depth.

How the salt crust works

The dough’s composition—flour, salt, and egg whites—is designed to achieve a pliable yet sturdy texture that can be rolled thin enough to conform to the pumpkin’s contours without tearing. The egg whites act as a binder, ensuring the dough holds its shape during baking, while the salt seasons the exterior and hardens into a protective crust. Once mixed with water, the dough is left to rest for twenty minutes, allowing the gluten to relax and making it easier to roll out smoothly.

Butternut pumpkins, typically weighing around 1.2 kilograms each, are the preferred choice for this method due to their uniform shape and sweet, dense flesh. The oven temperature of 200 °C ensures the crust sets quickly while the pumpkin cooks through gradually. After ninety minutes, the internal temperature reaches a point where the flesh yields effortlessly to a skewer, indicating it is fully tender. The crust’s rigidity at this stage makes it easy to crack away cleanly, revealing the caramelized pumpkin beneath.

The salsa verde that cuts the richness

The salsa verde serves as a counterpoint to the pumpkin’s natural sweetness, introducing layers of acidity, saltiness, and herbal freshness. The base of the sauce is a blend of parsley and basil, which are finely chopped along with garlic and anchovy to create a smooth, emulsified foundation. The anchovy contributes umami depth without overpowering the other ingredients. Lemon zest is incorporated to infuse the sauce with its aromatic oils, while the chopped lemon flesh is added later to provide bursts of juicy acidity.

Green olives and pepitas are folded in after blending to introduce contrasting textures—briny, chewy olives and crunchy, nutty seeds. The olives, roughly chopped, retain some of their firmness, while the pepitas add a delicate crunch. The final addition of grated parmesan enhances the dish’s savory profile, its saltiness and sharpness melding with the salsa verde to create a cohesive finish.
